FOR THE GARLIC HERB BUTTER (THE STAR OF THE SHOW):
- 1/4 cup (1/2 stick) softened butter
- 1/2 tbsp Dijon mustard
- 1/2 tbsp fresh chives, chopped
- 1/2 tbsp fresh parsley, chopped
- 2 tsp minced garlic
- 1 tsp lemon juice
- 1/4 tsp each: cayenne, paprika, red pepper flakes, salt & pepper
FOR THE STEAK & POTATOES:
- 1.5 lbs sirloin or ribeye steak, cut into 1-inch bites
- 2 lbs Yukon Gold or Russet potatoes, peeled and quartered
- 1/2 cup warm milk or cream
- 2 tbsp butter
- Salt and pepper
